Sometimes I complete my thought and want to add more after a few seconds. Would you believe some people frown upon this?
It really isn't a big deal and there are plenty of totally legitimate uses for it. Sometime it just fits. But enough about how I feel, tell me how you feel about this.
Yes, along with but, so, however, etc, it's a convenient way to start a sentence. It's also showing up increasingly more often in professional and formal writing for that reason as the rules of English shift. I still don't think it's technically correct, but it's becoming more and more acceptable. Depending on your particular teacher, employer or editor, it may or may not get you marked down.

Starting a sentence with "But" is also improper. Whatevs, you should see the way people my age write. The bastards can't put together a simple sentence.

I'm not sure what you're implying. Starting a sentence with "With," as far as I know, is and has been proper and common usage.

'And' is a conjunctive word in the English language, used to connect words, phrases, or clauses that have the same grammatical function in a sentence/construction.

Yeah, I remember my English teacher in 6th grade threatened to put a bullet through my head for starting one of my sentences with and. And I do it anyway.

Why define a variable, when you have no coding that alters the variable?
I think it should be avoided because it's tacky. But I don't care if you present yourself poorly, really. I mean, I'm not above slang nor colloquialisms. And sometimes I do it too.

It's because he's a smartass.
I often only use 'And' to start a sentence if there have been at least two, but normally three, independant or main clauses. If you haven't completed your thought, but you've already used up about three lines of text and the sentence is getting too long or too hard to follow, it's time to start a new sentence with 'And'.
And I start with because.
Take that, all my elementary schools teachers who told me I could never start a sentence with 'And', 'But', or 'Because'.
