I think the Kaptain K. Rool was only in DKC2. And I'm pretty sure Diddy wasn't in DKC3.

You're right about that. In DKC3, he was known as K. Roolenstein. Also, Diddy was kidnapped, alongside Donkey, by KAOS. They show up at the very end, though.
