The glaring red weak spot, the dumb taunt that gives you the information needed to defeat it, or the boss that shows up all the time and doesn't change tactics. There's also bosses that have you running around avoiding attacks until you can figure out that it takes one hit to the back to kill it.
Super Mario Galaxy (1 and 2) were victims of this. Bowser did the same thing every time you fought him, and the other bosses were just obvious and boring compared to the rest of the game.
The Legend of Zelda (the 3D ones, not the 2D ones) has bosses where you just sidestep or stay out of range until the boss WILLINGLY leaves itself open to attack. The only bosses I can say were difficult (or remember weren't easy) was the Fire Temple dragon in OoT, as well as most battles against Ganondorf.
Borderlands has some bosses where they can kill you in 5 hits and are pretty difficult, but the last boss (the Devourer or whatever) has you shoot it repeatedly for about 4 minutes and occasionally dodging a tentacle that only takes your shield out.
What other bosses are too easy?

If you've played Cave Story, I remember the very last boss in the game was incredibly easy to finish off. All you had to do was jump into his eye and shoot all your super missiles, and his health would drain in a few seconds.

Hey F you. The giant snowball like owned me several times in a row. It was obvious I had to punch his nose, but the bugger is frickin fast.
I would agree they are not the hardest bosses ever, but don't throw too easy around too lightly, even when you know how to kill them they can be challenging.
Picking easiest bosses I can make a long list. But for one the apple tree in Kirby's dreamland can't do shit if you take the porcupine power up.

it's pikachu...i think....made of waffles, and his special move is maple syrup to recover his health, and gives you hugs as a method of fighting back....i know he's the first boss but come on!

Easiest one I remember, Lucien shouldn't even count as a boss..there's no fight or anything ._.

Alan Wake's final boss was an actual boss, and it was by far the easiest boss I've faced in a very long time.

Kachua from Sin & Punishment; all she does is hover around and toss flunkies and other assorted wreckage your way, then gets easily dispatched with one slash of your blade. Her second form is not as easy, but I still took time to enjoy blasting away her literal meatshields :D

The last boss from Mass Effect 2 (withholding details because it's kind of a plot spoiler) was way too easy. My two squadmates were relatively fragile characters (Kasumi and Tali) and they didn't even get dropped by the boss.
Actually, the last fight in the first Mass Effect was really easy, too.

I don't if it counts as a boss but when you first meet the berserker in Gears 1. I was thinking "oh shit! wtf are we gonna do." but then until we had to go outside and use the Hammer of Dawn, it became a letdown.
If you're a HARDCORE FAN prepare to be always disappointed.
