Go into the symbol and right click the ending frame and click actions then type in stop();

That's actually what i tried at first but when I'm in the symbol and right click on the frame, there's no option for actions and when i press f9 it says "Current selection cannot have actions applied".

If the symbol is a movie clip, convert it into a graphic and then just select "play once", which is located under looping.
