I used to be able to play the song Layla by Eric Clapton easily... but now when I try to play the part where he shouts, LAYLA!!! My fingers keep going way too fast when doing the pull-offs. When I try to pick the notes induvidually, my finger muscles spazz out and I end up doing an extremely fast series of pull-offs that I can't stop? Should I see my doctor?

Slow it down, and when you've got the hang of it, bring it back up to normal speed.
But don't just say "I played it pretty good so now I'll speed back up". You'll fail. Play it good and slow until you can play it perfectly over and over. Then increase the speed.
