It's always best to underbake cookies, so always set a timer or stopwatch for a few minutes less than what's recomended, then immediately transfer the cookies to a cool place for them to set. Adding more sugar to the recipe also helps to better bind your cookies together and gives them a more chewy texture.

You should also never bake them directly on the sheet pan, always put down a layer of parchment paper. This will keep your cookies from getting that undesirable dark bottom that can ruin a cookie's flavor. And never use Pam or any other aerosol non-stick cooking spray.
