I downloaded the UK version of the demo, which is supposed to be uncensored, and I get a censored version! Can anyone help me fix this?

Delete it and redownload it?
People have been getting censored versions outside Australia, and people inside Australia have been getting uncensored sometimes. It just happens. I appreciate it's a massive file too (1.69GB), so you might not want to redownload.
Just wondering, are you sure it's the censored version? If there are no riot cops, then yes, it is censored.

I have redownloaded it, it hasn't worked. And I'm sure it's the censored version. I'm not going to try and download it again, the size is about twice what you said.

Just play the censored version and try to enjoy it as best you can. It won't be perfectly like the uncut version, but it should remain playable, at the least.

If you want, you could probably go around and use the fix mentioned here and here. Also, perhaps Valve may have started wising up to the region evading antics of the people who've been trying to get around the censorship.

When i bought tf2, i accidentally got the german censored version. I just made a steam support ticket, and they fixed it. Maybe you could do the same

The UK is uncensored. It's just the Germans and Aussies that have it censored.
