I think i'm going to go with some people's advice and go on a date with her as a 'friend' and if I want her i'll ask her out at the end of it, if not i'll pass it off as just two friends spending time with each other.

Its probably not a bad thing to be friends. I would just keep doing things normally and let her tag along. If she is serious, she will probably not give up that easily. I would try to get to know her more, then you may plot an interest in her too.
