Haven't exactly gone up to everyone I know at some point and asked them this.
( I'd probably be stoned if it came up )

Still, I find it odd that no-one I know can do it.

It's separate muscle movements than wiggling your ears.
It almost always works to un-pop my ears if in a plane.
Also helps if I have water in my ear.

I hear little clicks from both ears and the clicking sound is like a tiny version of when you crack you knuckles.
If I hold the muscles used tense then I can hear my breathing loudly.

Anyone know what part of my ear I'm using / abusing

It's not proper bone, it's a soft flexible bone that I forgot the name of.

I figured they could but not all people learn how and I'd heard of no-one else that knew.

I have pretty highly sensitive hearing - seems as good as when I was a kid

What part of the sound range is the ear drum sensitive to / used for

Mmm I can move them too but problem is you can't exactly show people how to do it.

So I've been told I'm abusing my ear drum.. does it damage much?

If you're doing what I think you're doing, I can do it too. Hard to describe, kinda like flicking the back of your tongue mid yawn but not.
There are bones in your ear, just behind your eardrum. Yes, there's a lot of cartilage too, but these are actual tiny bones (the smallest in the body). I don't think you'll be able to do much damage to them, not like a loud noise would. But as with cracking your knuckles I guess there might be a risk of wearing the bones down.

Can you make your ear click?

Yeah, I can do it. It's pretty much like when you hold your nose and pop your ears in a plane, except doing it without pinching your nose. It kind of hurts my head if I do it too much, but occasionally I do it accidentally and when I'm reminded that I can do it (like now) I find it hard to stop doing it. I've never found out what it is that I can do, though.

Everything here is eatable. Even I'm eatable, but that my children is called cannabilism and is frowned upon in most societies.

no no no you guys are way off. It is your Eustachian tubes you are hearing. They are how your body equalizes the pressure between the atmosphere and your inner ear. For most people they only do it on their own when the pressure differential is too great but for a lucky few (including myself) we have found muscles that when contracted will open them and equalize the pressure you experience this as a pop or a click because you hear the tubes open.

From wikipedia:

Some people are born with an ability to voluntarily contract just these muscles called Voluntary Tubal Opening, similar to the ability of those who can wiggle their ears. Those who have this ability can hear "pop" or "click" sound in the middle ear when actuating these muscles, and are able to hold the muscle contraction (some refer to this as 'clicking your ears to equalize the pressure').[citation needed] Doing so will make one's voice sound louder to oneself. This ability allows such people to voluntarily equalize pressures at will when making rapid ascents or descents, typically in aircraft flights or large elevation changes in either tall buildings or mountainous treks. When the breath (inhale or exhale) is controlled, air pressure can be intentionally increased or decreased in the middle ear (breathing through the nose only or mouth), where the feeling of a cool air breeze can be felt inside the eustachian tube.
