NOthing like getting into a soap opera... my personal fav is Days of Our Lives, but, if that's not your bag, then there are over a decade of Law & Order (and spinoffs) to engulf yourself in.

Mythbusters is pretty awesome, it runs on discovery channel
If you like Buffy and Angel, go for Firefly, it's Whedon's best work. Dollhouse is pretty good too, but doesn't pick up until halfway into the first series. Also try Veronica Mars, which is the same sort of drama laced with humour as Buffy, but with crimes instead of monsters.
Rome is a fantastic TV series. Deals with the transition of Rome from republic to empire. Centres mainly on these two soldiers, who interact with the bigger historical figures like Caeser or Brutus.
Deadwood is also amazing. Western, set in the town of Deadwood. Ensemble cast with no real main character, and every single character is perfect. Ian McShane as Al Swearengen is particularly good. The only flaw is the ending, which they only learned they were being cancelled shortly before, so it does feel slightly rushed.
Band of Brothers is excellent, too. Miniseries set during WW2, following a company of the 101st Airborne from training to the end of the war.
Edge of Darkness is another great miniseries. Bob Peck plays an policeman who's daughter is killed, and as he investigates the murder uncovers government conspiracies. Peck's performance is probably the best performance of any actor I've ever seen.
Battlestar Galactica is a solid Sci-Fi, the miniseries and series 1 and 2 are all fantastic, but from there on in quality does start to drop as they include more and more standalone episodes and less ones related to the main arc. It never gets bad, though, just less awesome than at the beginning.
Life on Mars is the best police show ever made, with the twist being the protagonist has found himself somehow back in the 70s when he's from the present day.
On the comedy side of things, try Black Books, The IT Crowd, Peep Show, Darkplace, Monkey Dust, Brass Eye and Look Around You.
See the movie Blood Diamond, it's great.

Doesn't seem like my cup of tea, but I'll check out a few episodes.

I've heard of Battlestar often, yet I've never tried watching it. Usually when I hear about something often and not watch it, I find I like it.

I remember seeing Darkplace a few times, but I forgot about it. I've never been attracted to British sitcoms. I do like Monkey Dust, though.

If you don't like sitcoms, still give Brass Eye and Look Around You a go. Brass Eye is a parody of Panorama style documentaries on things like paedophilla or drugs, where they pretend to be a legitimate documentary team and get members of the public or celebrities to show how thick they are (for example, they present scenarios to the public such as should a paedophile be allowed to have sex with a 6 year old girl, now that she's 21, and the public say he should be in a mental asylum, or they get celebrities to record appeals about paedophiles controlling an area of internet the size of Ireland and being able to make your keyboard release toxic fumes).
Look Around You is a parody of the old style science programmes they'd show in schools.
Brave and the Bold. May be a "kids" show, but it's more like 1960's Batman, animated for children and fanboys.
Also do try Dexter.
