i thought that was pretty neat, and that several of the actors play 2 characters, like moe, the bartender, plays apu, the quiki mart manager

That's Hank Azaria, he plays about 20 different characters on the show.

Dan Castellaneta, the voice of Homer, also plays around 15 characters.

Actually, Yeardly Smith, the voice of Lisa, is the only one who plays only one character. The rest all play quite a decent amount of parts.
