The remixed music from old and new games, i was wondering is it considered copyright infringement to the original creators like Nintendo for example, or no?

Debatable. Even if you remake it from scratch, the company could call intellectual copyright, but in practice, remixes and remakes are tolerated and even encouraged, even if you sample them commercially under fair use/parody.
Nintendo, I seem to recall, have no issues with people remixing their music, and even actively publicize the good ones!
General rule of thumb is that it's pretty safe to remix or remake music for games that are no longer in production, especially for obsolete consoles.
