Why do you assume we're not evolving? You wouldn't be able to observe it anyway, unless you live for few hundred thousand years. No one ever said that has humanity stopped evolving, and none of us would be able to tell if we had. The fact that we aren't perfect -- that we can't fly or breath underwater -- does not mean the theory of evolution is wrong. No creature is perfect, and there's no reason to believe that evolution is capable of creating a perfect creature. Evolution is the result of a number of small adaptations over a long period of time, and those adaptations occur based on what a creature needs to survive at a given time. Evolution does not progress in one direction toward the formation of a perfect being.
The theory of evolution is called a "theory" because that's what you call a credible scientific explanation for a certain phenomenon. Atomic theory is a theory, but no one is going out of their way to question it. When most people say "theory" they are referring to something not proven. When scientists say "theory" they are talking about an idea which has a large amount of evidence. Before that, if I'm not mistaken, it's just a hypothesis. Saying that evolution is "just a theory" only shows that you have no idea what the word "theory" means.
Finally, you're never going to find a missing link, or any other link between apes and humans, which has "human" in it. The missing link doesn't need to have human parts. It's not like you're ever going to find a creature with a monkey's body and a human's head. That's not how evolution works. If you really have such a poor understanding of evolutionary theory, it's no wonder you don't believe it.
