Double-Dash. It has very good multiplayer, and is still the only racing game I'm aware of where two players have to actually cooperate. It's much better than any other Mario Kart.

I tend to find racing games boring due to my own tastes, and Mario Kart 64 is pretty much the only one I've found fun. The newer ones would probably be just as fun or funner, but I haven't played them yet.
