I won't be playing that again until I go to college and I might play with my one friend that also played it. We use to use a strategy where he would build just military and I would just build the economy. He would build next to me so he could easily protect the both of us.
So with his 100 soldiers or so he would protect us and I would feed both of our economies with trade. There were times where I had so many farms and plantations built (infinite source of food and gold) that ever couple of seconds I had another 1,000 gold and food. Works great if one person doesn't mind not destroying things all the time.
That's a good, commonly used strategy, but if the opponent managed to destroy the economy player, the other one would be vulnerable since he would run out of resources. But once that both bases are set up, it can be an easy path to win :D
Usually while playing alone against friends I rush to build military units and catch them without nothing to defend themselves (my friends always end up getting angry, lol). While playing on teams, I sometimes use something similar to the strategy you just mentioned. Especially if I'm in the same team than a certain friend who is kind of a turtling guy who builds impossible-to-destroy fortresses.
And I don't think we've ever built a wall in number 3 while playing. In number 2 I used them all the time. Sometimes in layers of 5 or 6 walls when I had the resources.
Yeah, while playing AoE 3 I usually have the feeling that walls aren't that necessary. However in 2 I usually build them if I see the game will take too long, or if I'm playing against several people.
Also, on an unrelated RTS note, I want to reinstall Starcraft but I can't find the damn cd >:(
