Yeah but if its too rare it has that bloody iron taste.
IMO you season it, and cook it rare, that way it still keeps the flavor but don't have that horrible raw taste to it.

medium well is the right amount of tenderness but it doesn't get clumpy and hard to swallow. it is the easiest to cut and I find to be the juiciest. 10 points for the innuendo.
