Its simple really, put on special goggles that have cameras where the eyes should be that play a live recording of whatever they record on screens on the interior of the goggles. That way I'm not looking at her when fighting her, I am merely looking at a live video image of her, rendering me unaffected by the curse.

If you've ever read The Lightning Thief, the characters in the book defeated her.
You could look how they would do it.
The tools I would use is:
Mirror Sunglasses AK-47 (Fast shooting, so I could have a better chance of hitting her.) Sword
