Battlestar Galactica:
Killer robots try to destroy the remains of humanity, while humanity searches for Earth. Apart from a dodgy third season and a slow start to the forth, this is gold.
Buffy The Vampire Slayer:
Teenage girl fights monsters and says bad one liners. Seasons 2 and 3 are some of the best stuff on television ever, the rest is at least watchable, with plenty of other ace bits in there.
Angel:
Vampire fights an evil law firm. Never gets to be as good as seasons 2 and 3 of Buffy, but is much more consistent. Season 4 is a bit shit, but season 5's finale more than makes up for it.
Firefly:
Space Cowboys take in fugitives on the run from the corrupt government. Every episode is fantastic. It's flawless.
Band of Brothers:
Follows a company of the 101st Airborne from boot camp through to the end of World War 2. Better than every war film ever made put together. Probably the best TV show ever made.
Deadwood:
Western. Apart from the fact that it doesn't have any real ending, this is excellent all the way through.
Rome:
Shows the transition from the Roman Republic into the Roman Empire. Short, at only two seasons, but it doesn't really have any bad episode. It's solid all the way through, reaching into excellent at points. Titus Pullo is one of the best characters ever.
Doctor Who:
Bloke in a phone box travels through time fighting aliens. Awesome. Some of it, at least. It's great up until towards the end of Tom Baker's run, then it all starts to fall apart. The revival is dreadful, for the most part, with about 2 or 3 good episodes per series, usually written by Steven Moffat.
They're probably my favourites.
