Basically, you slice all the way around it's ass, then pull the lower intestine out and TIE A KNOT IN IT. This seals the lower intestine, which is full of shit. Then continue that hole up past the genitals up to the rib cage, pull out all the guts, and tie ANOTHER knot in the digestive tract right above the stomach. BE CAREFUL NOT TO PUNCTURE ANYTHING, ESPECIALLY THE BLADDER. The intestines and bladder are full of piss and shit; you DON"T want to get any of that on the meat!
Once this is done, slice the animal's throat and hoist it up into a tree by it's hind leg to drain out all the blood.
Remember, the trick is to cut as little as you can; if you accidentally puncture the bladder or intestine, you have have just ruined all the meat!!!
