Just set your screensaver to blank and use a really short timer, like 1 minute. Ubuntu doesn't have processes that require a lot of CPU when it's idle (depends on what you install of course). Otherwise, try sudo /etc/init.d/gdm stop (that stops the GUI).

Yes, that would work great. After you've installed Ubuntu, you're good to go. There's already an email application and Firefox installed by default. All the drivers should be installed automatically. For such basic tasks, you really don't have to have any knowledge of the CLI.
