For a couple of reasons. I can't be sure, but my main guesses would be it's a cheap, lightweight, easily modifiable midengine sportscar that due to it's popularity at the time has a large abundance of parts available on the market and a community dedicated to the fiero, still to this day. I think one big reason this car is chosen for kit conversions over others is it's completely fiberglass body panels; they're not part of the actual structure of the car and it's purely cosmetic, meaning the car could essentially be driven without any body.

And why use a K-car? Fiero's are designed to be fun, zippy little sports cars. A K car is a vehicle designed strictly for transporting werthers originals and licorice all sorts from the grocer to the retirement home. No fun at all. Not to mention, the K car's body is not as easily modifiable as a fiero's.

Not every car has a community or an abundance of parts and pre-made modifications/kits.
