I think based on the OS in use here, I feel the only linux distro that will work, is probably puppy linux, as far as I know it requires the least amount of resources to run. most other distros require a minimum of 256mb of RAM

I don't think Windows 2000 ran on hardware that required much more RAM than that itself, I could be mistaken though
