Nowadays, you can get some pretty convincing camera effects, it's not even that complicated. Plus, the freezing theory is the main one people keep insisting on, it seems pretty logical to me.
even if that were the case it'd be easier to freeze/overlay a certain side of the screen with a camera which was on a tripod, for example. and note how we didn't see any shadows or hear any movement?
Actually, if you watch it on this Youtube video, if you look at 4:49, you can see a shadow appear on the white card he's holding and then he quickly moves it after realising.

Apparently that snowflake is meant to symbolise the fact that that section of the screen was 'frozen'.
The only thing which puzzles me is that Derren said that the stunt took 1 year to do. Unless he's just lying then it seems unlikely that you could spent a whole year on the stunt if it's just down to camera tricks
