It doesn't mean they don't want to simulate it. Alcoholics oftentimes drink near-beer, and diabetics use sugar substitutes. Just because you can't consume something (for health, law, or morals) doesn't mean you don't have the craving.
I personally think it should be ignored. It seems wrong to trick yourself.

humans are animals, seriously guys, we are no different from anything else with hair and eyes and mouths, and some animals eat animals, are you saying lions are somehow cruel to animals?
So, we aren't in control of our actions or our practices because we're just animals, playing the game the way they're meant to? We have the ability to consider things beyond our survival. A lion sees barely past its nose. It eats when it's hungry, it takes what it desires. Its empathy is short-reaching and only covers its kin. Lions don't acknowledge the pain of other living things. They can't; they aren't smart enough. As you move up the scale, you see creatures like bonobos and gorillas feeling sad for dead animals, and helping living ones when they can. You see dolphins saving people from drowning, and showing respect for other creatures. We are at the top, where we can transcend innate concepts. We have the ability to deny our urges, and we have the capability of accommodating for the unnatural turn. Humans have come to a point where they control their own nature.

You act as though it's silly to reject something like consuming other animals when we don't need to. I find it silly that you're that dumb. We don't need to do it. If we had to throw puppies into windmills to stay alive, it would be a necessary sacrifice. But if you find a way to survive without throwing puppies into windmills, why would you still do it? You only do it because your natural urge (the one that makes sure you keep yourself alive) makes it a pleasure so that you don't forget to do it. We're smart enough to recognize that that part of our brain isn't necessary anymore. We take painkillers to tell our brains we have the pain under control; not to worry about it. We need to tell our brains we've got the nutrients covered; we don't need to throw more puppies into windmills.
You only eat meat because it's pleasurable, which is probably the grossest of reasons to do anything. This is just decadence to the fullest of its definition. It's not something like sex, where you can satisfy your urge at the suffering of nothing else. This is an urge that is only quenched by killing another being. This is an urge you no longer need to quench, but you do it anyway. You paint it differently in your head; you make it acceptable. Your brain detaches the reality from the situation, because you probably understand why it's wrong.
