I'm going to have to go with Maester Seymour from FFX.
Not because he's easy.
It's because he just -won't- die. I mean, any boss who manages to cheat death three times should be considered lame and annoying. Also he comes back stronger than before. I mean, it's pretty damn frustrating if you ask me.
