It's more to the choice of plugins that should be used actually. I recommend you take a look into soundfont for free orchestral stuff. But if you're really into quality then I'd recommend you Garritan orchestral
But the most important thing before you even try to make orchestral music is learn and understand music theory first! Even though you have crappy piano sample but if the melody is good people will still love it.

Maybe it's because of the bass? Try cutting unnecessary low frequencies in your sounds(lead, snare etc..) except for the bass. Use compression to control the peak of your sounds. This is some techniques on how to avoid your track from reaching 0dB.
To increase the loudness, use any brickwall limiter/maximiser plugin, and increase the gain(in other plugins you do this by putting the treshold up/down) until you get the same loudness as the track you use as comparison.
But before that, you need to make sure that your track is mix properly-the bass is controlled, clarity is achieved, drums are punchy enough before you try to increase the loudness. Otherwise you will get a distorted, squashy mix when you try to increase the loudness.
Well, it depends on the person's skills, and technologies that are available for him/her.
For me, the easiest would be Trance. Assuming that I never heard of the genre "lowercase" before.
Yup, it depends on what you feel comfortable. And you don't really have to stick to one daw only, I know someone who use FL and Ableton together. He really loves the piano roll in fl but he prefers to do the mixing in ableton because he's more comfortable with the mixing plugins in ableton.
