Birdo is a male. Just due to possible conflicts in western culture, and the fact that he does make eggs, they call him a she in some english releases.

Yeah, I know it. But he identifies himself as a woman, according to the original manual for SMB2: "He thinks he is a girl and he spits eggs from his mouth. He'd rather be called 'birdetta.' "
